We’re back with another smoothie recipe, only… this time we’re adding an ingredient to this smoothie that perhaps you might not see too often, but before you judge us for putting artichoke hearts in a smoothie, remember that one only needs to taste to be convinced. This recipe often reminds me of the first time we saw people putting avocados in smoothies, it seemed strange and kind of wrong, yet, they proved to be delicious and creamy and a few videos back I have a great creamy berry avocado smoothie recipe you should check out ( but avocados have slowly become a much sought after ingredient in healthy smoothies, especially keto smoothies, in recent years, and now we see them everywhere. Well, so it may be with the artichoke. This recipe is featured in my new book High Fiber Keto and obviously the artichoke is the star of the show due to its very high fiber content and numerous other health benefits. But beyond fiber and nutrients, it also has a wonderfully light and nutty flavor with a uniquely textured smoothness. It is certainly easier to taste than to describe! But that’s only the tip of the iceberg in this healthy keto smoothie; we also have on offer a variety of other delicious ingredients that just compliment and enhance the overall flavor. We have the smoothness of peanut butter with its wonderful flavor (remember to stick to the organic variety!), along with the decadent and rich heavy cream or full fat coconut milk, both keto diet regulars of course, and then we have the sweetness of chocolate grass-fed collagen protein to satisfy those healthy sweet tooth cravings, and finally vanilla MCT oil powder, just to top it all off. As you can see, this is about as flavorful a smoothie as they come and you being the master of the kitchen, are free to change up the quantities as your taste buds desire. We’ve got a lot going on here both in taste and in keto health benefits, with myriad good fats and, of course, good keto fiber! 100% flavor, 100% health, 0% guilt. That’s what it’s all about.

1 cup cold water
1/2 cup ice
100 grams (about 2/3 cup) chopped artichoke hearts
1/3 cup heavy cream (or full fat coconut milk)
1 scoop Simply GoodFats Chocolate Grass-Fed Collagen Protein scoop Simply GoodFats Vanilla MCT Oil Powder
3 tablespoons organic peanut butter
1 tablespoon chia seeds
*Note that the Simply GoodFats Chocolate Grass Fed Collagen Protein contains both powdered MCT oil and monk fruit sweetener. If you substitute a different collagen protein, you may want to increase your MCT oil and add a pinch of monk fruit.
Directions: Place all ingredients in a high speed blender and blend until smooth. Enjoy immediately!
